The recently opened Curadero is San Diego's hottest new Mexican bar and late-night eatery. This unique a two-part restaurant is one of the newest centerpieces in the Kimpton Hotel Palomar San Diego. This reconceptualized of the previous restaurant Saltbox is now a vibrant soulful, coastal Mexican kitchen. Dishes by executive chef Brad Katen and sous chef Emiliano Najera, offer regional Mexican benzene with local ingredients. Whether you going to enjoy chilaquiles and pozole or shrimp in a citrus Mexican cocktail sauce, you're sure to find some soulful, Mexican cuisine at this new restaurant.
The chefs want the menu to be shareable so they created larger plates such as adobo marinated charcoal grilled whole fish and braised pork shake with marinated onions and housemade tortillas. They also have a complete crudo bar with clams in a cucumber mignonette sauce, ceviche with white fish, tomato, cucumber, serrano pepper, cilantro and avocado, local market fish with cured chorizo, finger limes and jalapeno all well or poached shrimp in a Mexican cocktail sauce with avocado.
Of course, you can't leave out the amazing tacos. They have all types including a vegetarian which features zucchini, corn, tomatoes, onion, grilled scallions, peanut chipotle sauce and Oaxaca cheese.
Some of the best meals for sharing include the roasted chicken with goat cheese and black bean sauce, braised pork shank with marinated onions and the fresh roasted zucchini with corn, confit tomatoes, and sautéed mushrooms. Some of their sides are the best including the cilantro and lime rice, fried sweet plantations, mashed potato cakes and tomatillo salsa and crema.
The restaurant, located on the ground floor of the hotel include the dining room decorated by a mural from Mexican artist Nuezz and interior decorating by Studio Unlimited. Restaurant goers can enjoy a front-row view of oyster shuckers at the crudo bar and grab a fantastic custom drink by bartender Jade Boyd with more than 80 premium tequilas and other Mexican spirits.
